INGREDIENTS
- 250 gm rice noodles
- 1 cup frozen edamame beans
- 1 tbsp. sesame seeds
- 1 bunch green onions
- 1 small size of ginger
- 1 medium broccoli
- 1 tbsp. sesame oil
- 1 tbsp. low salt soy sauce
- 1 cup frozen peas
- 1 red chili
- 3 limes
- 4 tbsp. olive oil
- 1 tbsp. brown sugar
WHAT TO DO?
- Bring a pan of water for the boil. Cut the broccoli into florets and put to the boiling water for 3 min.
- Add the peas and edamame beans to the water, bring back to boil, then rinse, drain and refresh under cold water.
- Toast the sesame seeds in a dry frying pan over a low heat. finely slice the green onions.
- To make the dressing, peel and then chop the ginger, then seed and then slice the chili. Keep into a jar with a tight fitting lid.
- Then grate in the zest from 1 lime, squeeze in about 5 tbsp. of lime juice, finally add the remaining dressing ingredients. Shake them well.
- Mix the noodles, green vegetables and green onions, finally mix in the dressing, chopped mint and toasted sesame seeds.
